Happy Monday, I hope your week is off to a good start! This morning I had a major craving for Chocolate Chip Scones which is my favorite breakfast treat but something I don’t have often. For years I’ve had all sorts of silly digestion problems that a healthier diet has made a big difference on (more organic foods, less Gluten/processed junk, etc.), so sometimes it’s nice to toss in a Gluten-free baking recipe here and there for good measure. 🙂 Continue reading “Coconut, Chocolate-Chip Scones (Gluten-Free)”

Fresh Mint-Chip Ice Cream
I had so much fun making the Rosemary Olive Oil Ice Cream last time that I couldn’t wait to try some more recipes! Yesterday it was a beautiful day and I was sitting out in the grass with Zoey and our new foster dog, Kiwi, when I looked over at my garden and noticed how much mint I had growing all over the place… and I mean all over the place, it spreads like crazy lol. I once had it in a garden bed but moved it to a planter, however now it pops up in the garden bed all the time still and all throughout our grass but I kinda love it haha. It inspired me to make a fresh, homemade mint-chip ice cream. Continue reading “Fresh Mint-Chip Ice Cream”
Salted Caramel Macarons Dipped in Chocolate & Praline Crumble
Mom’s here for a fun-filled Mother’s Day weekend in Chicago and I couldn’t be more happy to have her here! We walked around in Lincoln Park this afternoon and had lunch together. When we left the restaurant, she caught notice of a French Macaron shop, so I asked if she’d be interested in making them ourselves this afternoon instead – so that’s what we did! We made French Macarons filled with salted caramel buttercream that we dipped in dark chocolate, then dipped in praline crumble – YUM, this was seriously so good!! Rosemary & Olive Oil Ice-Cream
Does rosemary & olive oil ice-cream sound totally weird to you? It did to me at first. One of the first dates Aaron and I went on while we were dating long distance between Chicago and LA was to RPM Italian in Chicago. We loved their food and atomosphere from the start, so this became a regular date-night spot for the two of us. During one of our visits, they had a special gelato for the night – flavored with rosemary, olive oil and sea salt. I thought to myself – this is weird, but I also love rosemary and this is probably super good – and it’s literally one of my most favorite flavor combinations now. French Macarons
As I mentioned in my Chocolate SoufflĂ© post, my intentions in 2017 are to bake things I’ve never attempted before… recipes that take true patience and presence… like French Macarons!
In Chicago, there are cute little Macaron shops all over the city showcasing unique flavor combinations and pretty pastel colors. I’m sure they are a big hit during Valentine’s Day! But rather than swinging by to pick some up, I of course want to bake some of my own for my Valentine’s. Continue reading “French Macarons”
