The number 1, hands down, best thing that St. Martin and the surrounding islands had to offer was their food. I’d be lying if I said I didn’t have at least 1 pastry, cake, gelato, etc. for each day that we spent there.
One of my favorite desserts came from our visit to St. Barths. As soon as I saw the words “Caramel Ice Cream Sundae with Peanuts, Popcorn, Hot Fudge & Whipped Cream” I was sold! And it was a great decision. The popcorn was my favorite addition because of it’s texture and buttery corn flavor. It was perfect with the caramel and fudge. Maybe I’ll have to do some exploring of my own to incorporate popcorn into my baking…
So where can you find this yummy treat? If you find yourself in the West Indies, this ice cream came from Eden Rock at St. Barths. Eden Rock was a beautiful boutique luxury hotel where we spent the majority of our day during our visit to the island. It was filled with warm sea-through water, soft beaches, beautiful views, and great food!
I couldn’t help but reflect on how grateful I was in this moment… to be in such a beautiful place, with my new husband – honeymooning, while eating the most delicious food.
